I hail from the green and gorgeous Pacific Northwest where I have lived for over 30 years. I am a proud mother of one incredible unicorn child and am an adoring partner to the love of my life. I have been in a variety of jobs that involved community outreach and public service. Being a genuine, compassionate resource to people has been some of my favorite work.
I grew up in a family that fully embraced all indulgences of food, even briefly dabbling in the Atkins Diet while I was in high school then later in my mid-20’s. Keto has come into my life more times than any other way of eating. To say I’m happy to be back is an understatement!
Early May of 2010 I changed my way of eating from what I always knew with the Standard American Diet to a plant-based diet. Fast food 3-4 times per week was no longer, and immediately I felt a connection and appreciation to how I was choosing to eat.
3 years into my plant based way of eating, something changed. I didn’t know it then, but looking back I realize I was experiencing my first inflammatory responses to wheat & gluten, corn, grains, soy and sugar. I had no health insurance, was low income and my body was failing me.
One wintery holiday season not long ago, my aunt had been telling about out this anti-inflammatory diet she had been following that was amazing, total game changer. On a whim I bought the book and my eyes were opened! This author was throwing out truth after truth - I could not deny that this was my answer. I learned about how sweeteners, regardless if they were natural or not, sugar-free too, still played tricks on your brain. I learned to recognize my inflammatory responses with the help of the three week elimination diet.
With this experience, I felt so much closer to my “food truth”, which is what I know to be true in terms of the food that I need to eat to take care of myself!
However, something was still missing…
I was noticing that with foods like grains, certain forms/brands of soy and corn, my inflammatory responses didn’t go away. I didn’t know that I would come back to the way of eating that started it all.
Someone Said “Keto”.
I had heard of a high carb, low fat diet from many Instagram vegan personalities, but one day I came across a low carb, high fat diet within my vegan community and thought, “Wait, you mean like the Atkins diet? But for vegans? I know I’ve done some crazy shit but… I dunno, friend.” I didn’t dismiss the idea, but I didn’t fully embrace it either. There is a reason for everything.
Something stuck with me. It nagged me. I have never been the one to not look into a way of eating that is healing chronic pain, illness and can be adapted to plant based. I needed to know more. I started following some vegan keto’ers on Instagram to see what the deal was. What were they eating? Why did they choose this crazy plant-based keto life?? The more people I found, the more I read stories that were like MY STORY! Had I found my people? Guys, it felt like it. I get goosebumps just typing this out because the moment I stepped into the world of keto, I got my life back.
Chronic fatigue? Gone.
Gastrointestinal issues? Gone.
Inflammation in my wrist, knee, and shoulder? Gone.
Post-nasal drip? Gone.
Trigger food cravings? Gone.
I’ve been living the life I always wanted with a vegan keto diet since March of 2017, free of inflammation, no longer trapped by fatigue, and ready to share this journey with all of you!
