One of my keto breakfast staples is chia seed pudding (or, in other words, the Chia Please! Pudding recipe). Once you get the basics down, creating your own variations of this omega-3, fiber powerhouse will be a snap!
Chia seeds are not only low in cost, but high in nutritional value. Two tablespoons, or one serving, contain 12g carbohydrates and 11g of fiber, 4g of protein, 9 grams fat, and 139 calories. Coming at 1 net gram of carbs per serving, chia seeds are a prime choice when looking for low carb, high fiber, with an omega-3 boost.
I’m going to be real with you: chia seed pudding has been something that I wanted so bad in my life but the consistency immediately triggered my side-eye. I didn’t know if I could get past it. However, once I understood that my way of eating was a powerful and important part of self-care, I could eat it all damn day. I feel like I get major adulting points.
1 cup non-dairy milk (I use either unsweetened Ripple Milk or unsweetened coconut milk)
2-3 tbsp. chia seeds
1 tsp. alcohol-free orange extract
Put all ingredients plus any additional pleasers listed below in a 16 oz. mason jar or bowl. If using a jar, place lid on tight, shake, and let rest for 20-30 minutes or place in fridge overnight. If placing in a bowl, mix together with additional pleasers and let sit for the above mentioned time. Depending on your preference, pudding can be anywhere from slightly runny to firm. I prefer less runny, but not firm.
- MCT oil
- Nuts & nut butters
- Manitoba Harvest Hemp Hearts
- Cocoa nibs
- Protein powder (my favorite is Vega Essentials Vanilla!)
- Any keto-approved sweetener of your choice (I've fallen in love with Lakanto Monkfruit 1:1 Sugar Substitute! It doesn't have an after taste that some don't like with Stevia)
What I like about this chia pudding is that the combination of orange extract and berries amplifies the flavor. Without a sweetener, the berries are the star of the show while you reap the rewards of chia seeds!
