Growing up with my grandparents they loved some bland health foods. Bless their hearts. One of our favorite breakfasts we shared was plain yogurt, raisins, and shredded wheat. I'm not gonna lie, I loved it. As a strong, independent adult who lives her best life and makes her own damn decisions, I made a keto yogurt bowl edition that is an easy and delicious spin on my favorite childhood breakfast.
This past week I was babysitting a coworker's pickled ferments and was paid in wild Pacific Northwest huckleberries from Sherman Pass and they are scrumptious! I immediately thought, 'Oh buddy.. these need a home in one of my keto yogurt bowls ASAP. I love feeling inspired by food!
I gathered some of my favorite ingreditents:
- Montezuma’s Dark Chocolate Absolute Black 100% Cocoa
- Go Raw Sprouted Pumpkin Seeds
- Manitoba Harvest Hemp Hearts
- Homemade grain-free granola
- Fresh berries
- Bob's Red Mill Shredded Coconut (Unsweetened)
- Almond butter for drizzlin'
You will also want to find a low-carb yogurt that works for you. I personally love So Delicious Unsweetened Coconut Yogurt. I use 1/2 c. so I'm looking at 3.5 net carbs to start and I'm good with that. You can fancy-up your yogurt like I did in my pics by blending them with a few berries to add beautiful pink and purple tones. It only took 2 blackberries in 2 cups of yogurt to make that magic.
I love making these keto yogurt bowls. I get to play with flavor profiles but also I get to use my new favorite food tracking app, Cronometer and manipulate ingredients to fit my macros! I love geeking out!
I think it's important for me to also make food that makes me feel like I'm taking care of myself. Rather than a huge sugar infused latte and a phoney candy bar posing as healthy part of your day, I sit back with my beautiful, delicious, good for the soul yogurt bowl and tell myself thank you for being good to me.
